Many, many years before Jamie, the Adams - Piccolo family (William, Ron, Eric and Frank) already knew about crushed garlic, alla dente, parsley, olive oil and fried spaghetti. It was all taken for granted in our 1960s and spaghetti was certainly not from tins as our British childhood contemporaries thought. Tomato sauce was cooked for hours using fresh ingredients, not squeezed out of a bottle. Pizzas were fried. Lasagna was stuffed full with whatever was available.Our mother, now known as Nonna because of the next generation (Chris, Nick) hailed from Napoli. A normal discussion sounded like an argument. An argument was hysteria. Amongst this colourful childhood was the cooking. Real Napoli style. Even to this day, I have not found genuine lasagne, pizza and potato pie in Italian restaurants. Nor rice balls or brodo. Jamie has made an admirable effort, but has missed a few.So here, thanks to Chris who put this manuscript together, are my mother's (aka Nonna) genuine Napoli recipes together with a few modified versions by Chris and Nick, commensurate with modern day trends.Enjoy!Eric Adams Read more
